Readers workouts

Finally, maybe, I’m making some progress getting moving again.

steps

I made my step goal on Tuesday, even though you can’t see it above. Yay! I took the dog for a walk, which definitely helped. I did a little bit of weightlifting in the evening, too.

I took a short walk on Thursday. And must have done something else too. Maybe I went to the gym? I can’t remember.

We did go bowling on Sunday, so that counts as exercise, right?

Monday I was so close! I should have just stayed up and extra 15-20 minutes and walked around the living room.

And since eating and exercising are so closely related, I thought I’d include a new recipe I tried this week, Amish One-Pan Ground Beef and Cabaage from smilesandwich.com.

cabbage

I know it’s not pretty, but it was yummy! And so easy.

Amish One-Pan Ground Beef and Cabbage Skillet

Ingredients

1 pound grass-fed ground beef
1 onion, chopped
1/2 – 1 head cabbage, chopped
1 tablespoon butter
1 clove garlic, minced
1 (14.5-oz) can diced tomatoes
1 (8 oz) can tomato sauce
salt and pepper, to taste

Instructions

  1. In a large pan, brown ground beef until no longer pink. Add onion and continue cooking until translucent. Drain extra fat if needed (or leave it and don’t use the butter). Add garlic and continue cooking for 1 minute.
  2. Add butter, cabbage, tomatoes, tomato sauce, salt and pepper to the pan and stir to combine. Cover and simmer about 20 – 30 minutes until the cabbage is soft.
